Inner Goddess Raspberry Breakfast Bowls

10 reviews / 5 average

Poof!

Just like that, the inner goddess is back.

Last time she brought desserts, and this time she’s taken the form of vibrant mango raspberry breakfast bowls loaded with glow-worthy nutritious ingredients and topped with everything beautiful and nice, including but not limited to your last crumbs of Coconut Oil Granola.

I am not mad about seeing this in front of me at breakfast.

The timing of this post feels very appropriate because I am basically dying for a boost of these inner goddess healing powers after the last few days of living up The Sick Life On The Couch. Hello blankets, tissues, and all the best-worst shows on Hulu (I’m looking at you, Bachelor). The actual sickness plus my gravitation towards health drama has made for a really special few days. And by special, I mean send your condolences to Bjork.

These bowls are my life-giving secret for baby-stepping my way back into the real world.

I actually had a super-yum, spicy, savory post scheduled for yesterday, but being so suddenly bleh in the appetite department, I just couldn’t bring myself to write about all the delicious flavors of the recipe when all I could stomach in real life were those little packets of noodle soup (this is a judgement-free zone so don’t even speak). All I can say during times like these is –> stick with me. My appetite shall return and it will bring the more peppy, bold, flavor-packed recipes along with it.

For the time being, though, who even needs the spicy savory things in life when you can glow from the inside out with these gorgeous, refreshing, happy-face mango raspberry breakfast bowls?

I can feel the inner goddess of glowy things awakening within.

Symptoms of being sick: mental fogginess, weird blog posts.

Moving right along.

Honey, anyone?

The beauty of these inner goddess breakfast bowls is that you can basically make them however the heck you want with whatever the heck you happen to have on hand. One of my winter survival tactics is to load up on frozen fruit, so when I’m ready for a week’s worth of breakfast bowls, I just consult my freezer to find out what I have left and then that becomes the flavor du jour for my inner goddess beauty bowls.

And I should have called them beauty bowls. Dang.

One other thing worth mentioning is that these pretty breakfast bowl combos can keep in the fridge for a few days in little individual jars or containers, so you can bring out your best morning self even when you’re on the run or you need to eat in the car or during a meeting or something. Not that I’ve ever done that or anything – you know, the idea just sort of popped into my mind just now.

Make, eat, love, glow. ♡ That’s about all there is to say here.

Inner Goddess Raspberry Breakfast Bowls

  • Author: Pinch of Yum
  • Total Time: 15 minutes
  • Yield: 34 breakfast bowls 1x

Description

Inner Goddess Raspberry Breakfast Bowls are loaded with nutrients, ready in 20 minutes, and perfect for breakfasts on the go.

Ingredients

Scale
  • 10 ounces frozen mangoes or peaches
  • 1 cup water
  • 10 ounces frozen raspberries
  • 1 cup light coconut milk
  • 1/3 cup chia seeds
  • 1/4 cup flaxmeal
  • 1/4 cup honey
  • a pinch of salt
  • berries, granola, nuts, coconut, and cream for topping

Instructions

  1. Soften the frozen fruit in the microwave or by leaving it out on the counter for a little while.
  2. Blend the peaches with the water. Blend the raspberries with the coconut milk.
  3. Combine the two fruit puree mixtures and stir in the chia seeds, flax, honey, and salt. Let stand for 10-15 minutes to thicken.
  4. Serve with toppings of your choice. Store leftovers in the fridge for up to three days – add water to leftovers to rehydrate (the chia seeds will soak up a lot of the moisture, making them super thick).

You are speaking my language in this post! Holy cow, kids have been sick with the cough stomach flu for 2 weeks now. Finally got an antibiotic. Wife just got sick on Monday and is still sick. Kids roaming around the house, everybody in turmoil. But raspberries…granola, I think she might be able to eat this. Was getting seriously worried about wife when she requested Kraft Mac & Cheese. Thought she must be on her death bed to request such a thing! oh well, please family get well before Tom here goes insane.

So simple, yet so gorgeous! I love the pretty combination of colors you have going on, especially since I’ve been all about fruit bowls lately.

Mango and raspberry! My two favorites 🙂 Love that you topped this with your awesome homemade granola. Looks divine. I hope you feel better quickly. I was sick last week and feeling like you don’t have the energy for anything at all is the worst 🙁 Get well soon!

I don’t normally comment on blogs, but I just wanted to say that your food photography is so on point. Every one of your posts has such amazing pictures! I’m so excited to try this recipe.

Sorry to hear you weren’t feeling well and glad you are on the mend. I have to write you a big giant THANK YOU for sharing your blogging resources and for your amazing ebook Tasty Food Photography. The info you shared has transformed my photography, although it is still very much a work in progress, it has improved by leaps and bounds. Yesterday, I finally got a photo accepted by foodgawker! https://foodgawker.com/post/2015/02/25/438716/

    Thank you!

Such gorgeous photos! noticed that you wrote to blend peaches/water separately from the raspberries/coconut milk. Is there a reason why you can’t just blend all at once since they end up mixed anyways?

    1. Pinch of Yum Logo

No, I just didn’t have enough room in my blender for all of them at once so I did them separately. 🙂 Either way works!

thank you for this bit of spring in the middle of a random whiteout snow here in chicago. excited to try this this weekend as part of a brunch with foodies! (also i cannot read “inner goddess” without thinking of anastasia steele and 50 shades of gray. i realize that says more about me than you, though).

This sounds outstanding! Once my fav produce shop opens up, I’m going to raid their seasonal fresh fruit and make this all the time!! Pinned 🙂

These bowls sound wonderful. I just hope they don’t bring out the inner goddess in my husband… 🙂 I would need to add some protein powder to make them work. Oh wait, I could also use some of the whey left over from making yogurt, in place of the water! These just may be on the menu for breakfast in the morning, since I just happen to have all the ingredients. Glad you are feeling better, Lindsay. You certainly put a smile on my face (something I’ve needed lately) with this recipe.

I made this for breakfast today and it was a spectacular success. I had to add in some cherries to fill out the mango and raspberries. The one thing I would do differently is the sweetener. Maybe I didn’t get it mixed in well enough, but I kept specifically tasting honey, which I didn’t care for, even though I used the one type of honey I like (mesquite). I would probably add the sweetener to one of the fruits in the blender to get it better distributed next time I make this. There will definitely be a next time. And, fortunately, my husband did not morph into a goddess – a fact for which I am very grateful. 🙂

Thanks for the comment – I’m so glad to hear that you liked it Susan, and that your husband stayed his normal self. 🙂

I’m sorry to hear that you’re feeling crummy, but way to go with this recipe! These bowls are filled with so much goodness – delicious fruit, omega 3s and lots of fibre. If I close my eyes while eating it I might even be able to pretend it’s summer 🙂
